This dish is actually called “Pearl barley and puy lentil salad with roasted heirloom baby tomatoes, chorizo, green beans and baby radish.” I’m a little skeptical of dishes that have a name as long as the queues at the deli selling the necessary quinoa or squid ink pasta. But Katie never lets me down. Sure, this dish might just as well have been called a ‘lentil salad’, but where’s the foodie-ness in that? It’s a delicious lunch stand-by at my place (it saves me from gorging on that other foodie favourite: instant noodles with cheese). I just can’t get enough of the barley in it. Maybe that should be ‘barley salad’?

I made a barley soup 2 weeks ago, and it is the first time I have ever used barley. Now I can’t get enough of the stuff. I’m definitely going to give this salad a go – thanks for sharing!
